Raita is a popular yogurt-based side or dip in the cuisines of the Indian subcontinent. This raita is made from light and fresh ingredients and spices. The creamy and tangy Greek yogurt gives the raita a nice smooth and thick consistency. Toasting the walnuts adds a pleasing crunch and a sweeter, nuttier flavour than using raw walnuts.
2 cups Greek yogurt or sour cream
½ cup walnuts, toasted
coarsely chopped
Freshly ground black pepper
to taste
2 green chillies, finely chopped
1 teaspoon ground cumin
Juice of 1 lemon
Salt to taste
In a mixing bowl, combine the yogurt, walnuts, pepper, chillies and cumin. Add lemon juice and season it with salt.
Chill before serving.
