Peppered Maple Bacon

If you want to take your bacon to the next level, this is the way to do it. Sweet, salty, and with a little heat: my favorite. Make sure to bake the bacon on a wire rack for extra crisp slices.

Makes 8 slices

Preheat the oven to 400°F. Fit a cooking rack in a baking sheet.

Arrange the bacon in a single layer on the cooking rack. Bake for 10 to 15 minutes, until the bacon begins to brown.

Remove the pan from the oven. If necessary, blot excess bacon fat with paper towels. Brush both sides of the bacon slices evenly with 1 tablespoon of the maple syrup. Bake for an additional 5 minutes. Brush with the remaining tablespoon maple syrup and season with black pepper. Continue to bake until desired crispiness is reached.

Remove from the oven and allow to cool slightly before serving.
