Loaded Mashed Potatoes

I’m a lifelong lover of mashed potatoes and these have it all. Nutritional yeast is the star of the show. It gives a subtle cheesy flavor so make sure not to skip it. The potatoes are great paired with any beef, chicken, or pork dish during the cooler months when you feel like having a heartier meal.

Serves 4

Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon salt and bring to a boil. Reduce the heat to medium-low and simmer until the potatoes are fork-tender, 15 to 20 minutes.

Drain the potatoes and return to the pot. Add the ghee, coconut milk, nutritional yeast, garlic powder, and onion powder. Mash the potatoes until smooth. Fold in the bacon, green onions, and dill. Season with salt and pepper to taste.

note: Russet, Yukon Gold, and red potatoes are all great options.
