Raspberries must be dry, so do not wash them.

makes about 5 kg

3 kg fresh, very ripe best-quality raspberries

2.7 kg caster sugar

Preheat the oven to 200°C/400°F/Gas 6.

Place the raspberries in a heatproof dish. Do the same with the sugar. Bake both in the preheated oven until very hot, about half an hour. The raspberries will sweat but will not totally collapse.

Combine the hot sugar and hot raspberries, and stir together. The raspberries will melt with the sugar and become instant jam! Put into clean jam jars and seal with wax paper.
