SWEET HONEY SOY CHICKEN THIGHS

Cooked on the bone to keep them juicy and wrapped in their own crispy skins for extra flavour, these sweet, umami-rich chicken pieces will have everyone reaching for more. Napkins are recommended!

From the store cupboard

4 tbsp light soy sauce

2 tbsp oil

Put all of the ingredients into a large bowl. Massage the marinade into the chicken, then cover and set to one side for 2 hours or overnight in the fridge.

If marinating overnight, remove the chicken from the fridge at least 2 hours before cooking.

Preheat the oven to 180°C (350°F).

Toss the chicken again in the marinade before tipping the pieces and marinade on to a baking tray. Bake in the oven for 20 minutes, then flip the pieces over and baste in the marinade. Cook for a further 20 minutes, flip again and baste one last time. Increase the oven temperature to 200°C (400°F), then return the tray to the oven for a final 10 minutes of caramelisation. Serve piping hot.
