HOT CHILLI DRAGON SAUCE
The aroma from this sauce fills your kitchen like no other; it’s aromatic, it’s spicy, it’s quite simply amazing. I love the sound of the sizzle as you pour the oil into the soy sauce. You won’t have tasted anything quite like this dip before, but you will want to use it again and again once you have.
3–5 green bird’s-eye chillies, finely chopped
3 spring onions (scallions), thinly sliced into ringlets
From the store cupboard
4 tbsp soy sauce
4 tbsp vegetable oil
Put the chopped chillies and spring onions into a heatproof bowl, pour over the soy sauce and mix well.
Heat the oil in a saucepan until it begins to smoke a little, then remove from heat and slowly and carefully drizzle over the soy sauce mixture. It will sizzle and spit (like a dragon) and it will fill the air with an amazing aroma.
This dip is great with everything.
