LUCKY SEVEN SEASONING SALT
After I opened my Hong Kong-style noodle bar, Wantons, a few years ago, I began designing a spice mix that could be added to wings, ribs and – of course – fries. After a few attempts, this is what I came up with and the customers seemed to really enjoy it. Sprinkle over your fried goodies for a taste explosion.
1 tbsp paprika
1 tbsp Chinese five spice
2 tbsp garlic powder
2 tbsp onion powder
3 tbsp celery salt
From the store cupboard
70g (¼ cup) salt
½ tbsp white pepper
Combine all of the ingredients in a large bowl and then transfer to a bone dry airtight container. This will happily sit on your shelf for 3 months.
