LYCHEE CRUSH
This drink will have you romanticising about sandy beaches, hot summer afternoons and the gentle wash of the sea lapping across the shore. Sweet, juicy and creamy, it’s a drink that slips down so smoothly, kicking your taste buds into action on the way through.
650ml (2¾ cups) lychee juice
6 tbsp condensed milk (you can use a vegan alternative)
300ml (1¼ cups) coconut milk
3 cups crushed ice
1 x 420g (15oz) can lychees
Put all of the ingredients into a blender, reserving 4 whole lychees for decoration. Blend on full power for 20–30 seconds.
Pour into four glasses and top each one with a whole lychee.
