To my uncle Paul, for showing me that love and loss are survivable. You are my people. For John; you would have loved this one.
I would like to thank my readers for supporting me throughout the writing of this book. Their honest reviews, questions, and constructive criticism have given me the confidence that this latest edition covers the most useful parts of food preservation.
