Ingredients:
❖ 2 lbs. green beans
❖ 4 eggs
❖ salt
❖ black pepper
❖ water
❖ butter
❖ olive oil
❖ 1 bunch cilantro or parsley
Preparation:
Cut the 2 lbs. of green beans.
Put the beans in a pot of cold water and let cook until the pot is boiling about 20 minutes.
Drain out the water then put 1 tsp. salt and mix.
In another pan put 1 head chopped onion, butter, and olive oil and sauté then add in the green beans.
Add salt if needed.
Add the black pepper.
In another bowl beat 4 eggs with salt and black pepper to taste.
Meanwhile, cut the 1 bunch cilantro or if you have/prefer 1 bunch parsley not both.
Now add in the eggs with the green beans mix well when it’s cooked turn off gas and add in the cilantro or parsley whichever is available, enjoy.
