Ingredients:
❖ Rice pilaf
❖ 1 cup lentil
❖ 2 cups water
❖ 1 tsp. salt
❖ 1 tbs. olive oil
❖ 2 tbs. butter

Preparation:
First make the rice pilaf normally.
For the lentil: in a separate pan put 1 cup lentil and 2 cups water.
Add 1 tsp. salt and 1 tsp. oil let cook until water evaporates medium heat 20 minutes.
Now put the rice pilaf with the lentil add the 2 tbs. butter mix well and serve.

Խաչափուրի (Katchapuri)

Ingredients:
❖ 1 lb. Armenian feta cheese
❖ 4 tbs. cottage cheese
❖ 1 tbs. Italian seasoning
❖ 2 eggs (depends on how much your making)
❖ black pepper
❖ puff pastry
Preparation:
Separate the egg yolks from the whites.
Put the whites in with all the other ingredients and stir well.
Then when puff pastry is unfrozen cut in the diagonal and put in the cheese and fold dough like a cross.
Later put on a baking sheet and lightly brush with egg yolks (for shine).
Put in the oven and bake at 375 degrees for 20 minutes or until golden brown.

Խաչափուրի (Katchapuri) with Kale

Note:
This is an interesting variation of the original katchapuri and it is also very delicious. I should also point out that there is no salt in this recipe. You may add sesame seeds on top if you wish.
Ingredients:
❖ 1 head onion dice
❖ 2 cloves garlic dice
❖ olive oil
❖ 1 bunch kale
❖ 1 bunch white Swiss chard
❖ black pepper
❖ Armenian feta cheese shred
❖ 1 egg
❖ puff pastry
Preparation:
Sauté in oil: the diced 1 head onion and 2 cloves garlic.
Wash and cut out the leaves of the kale throwing away the stick part of the kale.
Let the kale dry out very well or else the moisture will make the katchapuri not rise while baking and we do not want that.
Meanwhile, wash, clean, and cut the white Swiss chard discarding the stick part.
Add in the black pepper, feta cheese, and 1 egg to the mixture stir and freeze for 30 minutes so all the ingredients get to rest and come together.
Then put the filling in the puff pastry dough, shape, and brush with an egg for shine.
Put in a 375 degree oven and bake for 20 minutes or until golden brown.
Serve.
