Quick Strawberry Cake

Ingredients:

❖  2 sticks unsalted butter, softened

❖  1 cup sugar

❖  2 cups self-rising flour

❖  4 eggs, beaten

❖  2 tbs. milk

❖  strawberry jam, for spreading on top

Preparation:

Preheat the oven to 320 degrees and line the base of the cake pan with parchment paper.

Cream together the butter and sugar until pale and fluffy using an electric mixer.

Add the beaten egg to the mixture in 5 or 6 additions, making sure to thoroughly combine all the ingredients at each stage.

Sift in half of the flour and then fold in lightly until just combined.

Then fold in the remaining flour with the milk.

Now pour the batter into the cake pan and bake for about 1 hour. When it springs back when touched, or is golden brown in color, and toothpick comes out clean when inserted, you know it’s done.

Now let the cake cool.

When cooled, spread the strawberry jam on the cake and enjoy!
