Hoisin-Glazed Chicken with Plums and Green Onions
What a wonderful combination of flavors—the richly satisfying taste of hoisin-basted chicken with the sweetness of plums and bite of grilled green onions.
PREP: 20 minutes plus marinating GRILL: 34 to 48 minutes
MAKES: 4 main-dish servings
¼ cup rice vinegar
1 tablespoon Asian sesame oil
1 tablespoon grated, peeled fresh ginger
1 teaspoon Chinese five-spice powder
¼ teaspoon ground red pepper (cayenne)
1 chicken (4 pounds), cut into 8 serving pieces, skin removed if you like
4 plums
2 bunches green onions
1 tablespoon olive oil
¼ teaspoon salt
teaspoon coarsely ground pepper
cup hoisin sauce
1 tablespoon low-sodium soy sauce
1 teaspoon sesame seeds
1. In large bowl, stir together vinegar, sesame oil, ginger, five-spice powder, and red pepper. Add chicken to spice mixture and toss until evenly coated. Let marinate 15 minutes at room temperature, turning occasionally.
2. Meanwhile, prepare outdoor grill for covered direct grilling over medium heat.
3. Cut each plum in half; discard pits. Brush green onions with olive oil and sprinkle with salt and black pepper. In small bowl, mix hoisin sauce and soy sauce.
4. Remove chicken from marinade and place on hot grill rack. Discard marinade. Cover grill and cook chicken until juices run clear when thickest part of chicken is pierced with knife, 25 to 35 minutes, turning pieces over once. Reserve ¼ cup hoisin mixture for serving; brush chicken with remaining mixture for last minute of cooking. Transfer chicken to platter. Cover; keep warm.
5. Place plums and green onions on hot grill rack. Cook onions until lightly charred and tender, 3 to 5 minutes, turning over once; cook plums until lightly charred and softened, 6 to 8 minutes, turning over once. Transfer onions and plums to platter with chicken.
6. To serve, sprinkle chicken with sesame seeds. Pass a bowl with reserved hoisin mixture.
