Chicken Grilled in a Foil Packet

We took three of our favorite chicken recipes usually prepared in a skillet and adapted them to the grill.

PREP: 15 minutes GRILL: 15 minutes

MAKES: 4 main-dish servings

4 medium skinless, boneless chicken breast halves (about 1 ¼ pounds total)

3 tablespoons drained capers, chopped

2 tablespoons butter or margarine, cut into pieces

¼ teaspoon coarsely ground black pepper

¼ cup loosely packed fresh parsley leaves, chopped
heavy-duty foil

2 teaspoons cornstarch

1 tablespoon water

1. Prepare outdoor grill for direct grilling over medium heat.

2. Make foil pouch: Cut two 24" by 18" sheets heavy-duty foil; layer to make a double thickness. Place chicken, capers, butter, peppers, and 2 tablespoons parsley in center of foil. In cup, stir cornstarch with water, then pour over chicken. To seal foil packet, bring short ends of foil up and over ingredients and fold two or three times to seal well. Fold remaining sides of foil the same way to seal in juices.

3. Place packet on hot grill rack and cook 15 minutes, turning once halfway through. Remove packet from grill; let stand 5 minutes.

4. Before serving, with kitchen shears, cut an X in top of packet to let steam escape. Open packet and check to make sure juices run clear when thickest part of chicken is pierced with tip of knife. Sprinkle chicken with remaining parsley.

MUSHROOM AND MARSALA CHICKEN: Prepare recipe as directed, but omit capers and add 8 ounces sliced mushrooms, 2 tablespoons dry or sweet marsala wine, ½ teaspoon salt, and 1 garlic clove, crushed with garlic press, to packet before grilling. In step 4, sprinkle with an additional 1 tablespoon marsala wine before serving.

BUFFALO-STYLE CHICKEN: Prepare recipe as directed, but omit capers and add 3 tablespoons cayenne pepper sauce to packet before grilling. Serve chicken with 3 medium carrots, peeled and cut into 3-inch-long sticks; 3 stalks celery, cut into 3-inch-long sticks; and ¼ cup crumbled blue cheese (1 ounce).
