Filet Mignon with Roquefort
Tangy Roquefort cheese is such a luxuriously flavorful topping that just a tablespoon per serving is enough.
PREP: 5 minutes GRILL: 10 minutes
MAKES: 4 main-dish servings
4 beef tenderloin steaks (filet mignon), 1 inch thick (4 ounces each)
2 teaspoons olive oil
½ teaspoon salt
¼ teaspoon coarsely ground pepper
1 ounce Roquefort cheese, crumbled ( cup)
1. Heat ridged grill pan on medium-high heat until hot, or prepare outdoor grill for direct grilling over medium-high heat. Pat steaks dry with paper towels. Rub oil all over steaks and sprinkle with salt and pepper.
2. Place steaks in hot grill pan or on hot rack and cook 8 to 10 minutes for medium-rare, or to desired doneness, turning over once. Transfer steaks to 4 dinner plates; top with Roquefort.
