Filet Mignon with Horseradish Salsa

Juicy steaks taste even better with our flavor-packed salsa. (For photo, see .) For an extra-special company dinner, grill portobello mushrooms as you would in Portobello and Prosciutto Salad and serve thickly sliced alongside.

PREP: 15 minutes GRILL: 10 to 12 minutes

MAKES: 4 main-dish servings

1 recipe Horseradish Salsa

1 teaspoon cracked black pepper

1 teaspoon olive oil

½ teaspoon salt

¼ teaspoon dried thyme

1 garlic clove, crushed with garlic press

4 beef tenderloin steaks (filet mignon), 1 inch thick (about 6 ounces each)

1. Prepare Horseradish Salsa.

2. Prepare outdoor grill for direct grilling over medium heat, or lightly spray a ridged grill pan with nonstick cooking spray, then heat on medium until hot.

3. In cup, mix pepper, oil, salt, thyme, and garlic. Rub pepper mixture all over steaks.

4. Place steaks on hot grill rack or pan and grill, turning over once, 10 to 12 minutes for medium-rare or until desired doneness. Serve steaks with Horseradish Salsa.
