Deviled Beef Short Ribs
When buying short ribs, choose the beefiest ones you can find and trim away any excess fat.
PREP: 10 minutes GRILL: about 30 minutes
MAKES: 6 main-dish servings
cup spicy brown mustard
ΒΌ cup prepared white horseradish
3 tablespoons Worcestershire sauce
4 pounds beef chuck short ribs, cut into serving-size pieces unseasoned meat tenderizer
3 ripe medium tomatoes (6 to 8 ounces each), sliced (optional)
1. Prepare outdoor grill for direct grilling over medium heat, or lightly spray a ridged grill pan with nonstick cooking spray, then heat on medium until hot.
2. In small bowl, mix mustard, horseradish, and Worcestershire.
3. Sprinkle beef short ribs with meat tenderizer as label directs.
4. Place short ribs on hot grill rack. Cook about 30 minutes for medium-rare or until of desired doneness, turning ribs often and brushing with mustard mixture frequently during last 10 minutes of cooking. Serve with sliced tomatoes if you like.
