Chipotle Pork Chops with Corn Salad

Chipotle pepper sauce is made with chipotle chiles, which are smoked jalapeños. If you don’t like the smokiness, you can use your favorite hot pepper sauce.

PREP: 15 minutes

GRILL: 8 to 10 minutes

MAKES: 4 main-dish servings

1 tablespoon chipotle pepper sauce

1 teaspoon ground cumin

1 teaspoon olive oil

1 clove garlic, crushed with garlic press

½ teaspoon salt

4 bone-in pork loin or rib chops, 34 inch thick (8 ounces each), trimmed

3 medium ears corn, husks and silk removed

2 ripe medium tomatoes (6 to 8 ounces each), chopped

½ ripe avocado, peeled, pitted, and cut into 34-inch pieces

¼ cup loosely packed fresh cilantro leaves, chopped

2 tablespoons fresh lime juice

1. Prepare outdoor grill for covered direct grilling over medium heat.

2. In cup, combine chipotle sauce, cumin, oil, garlic, and ¼ teaspoon salt. Rub an even coating of spice mixture on both sides of pork chops.

3. Place pork chops on hot grill rack. Cover grill and cook until nicely browned on outside and still slightly pink in center, 8 to 10 minutes, turning over once.

4. Meanwhile, cut kernels from corn and transfer to medium bowl. Add tomatoes, avocado, cilantro, lime juice, and remaining ¼ teaspoon salt; stir to combine. Makes about 3 cups.

5. Serve corn salad with grilled pork chops.
