Chili Potato Packet

We’ve included ground red pepper, onion, and chili powder for Tex-Mex appeal. To jazz these potatoes up even further, toss them after grilling with cooked corn kernels, fresh lime juice, chopped cilantro, and shredded Monterey Jack cheese.

PREP: 15 minutes GRILL: 30 minutes

MAKES: 8 side-dish servings

2 ½ pounds red potatoes, unpeeled, cut into
1-inch chunks

1 large red pepper, stem and seeds removed,
cut into 1-inch pieces

1 medium onion, coarsely chopped

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon salt

¼ teaspoon ground red pepper (cayenne)

1. Prepare outdoor grill for covered direct grilling over medium heat.

2. In large bowl, toss potatoes, red pepper, onion, oil, chili powder, salt, and ground red pepper until potatoes are evenly coated.

3. Lay out two 30" by 18" sheets foil on work surface to make double thickness. Place potato mixture on center of stacked foil. Bring short sides up and over mixture; fold several times to seal well, then fold in ends to seal tightly.

4. Place packet on hot grill rack and cook, turning once halfway through grilling, until potatoes are fork-tender, about 30 minutes.

5. Before serving, with kitchen shears, cut an X in top of foil packet to let steam escape, then carefully pull back foil to open.

ROSEMARY POTATO PACKET: Follow the directions left but combine potatoes with 1 tablespoon olive oil; 1 tablespoon fresh rosemary leaves, chopped; 1 teaspoon freshly grated orange peel; 1 teaspoon salt; and ¼ teaspoon coarsely ground black pepper.

LEMON-GARLIC POTATO PACKET: Follow the directions left but combine potatoes with 12 garlic cloves, peeled; 2 tablespoons olive oil; 1½ teaspoons grated lemon peel; 1 teaspoon salt; and ¼ teaspoon coarsely ground black pepper.

SHALLOT AND HERB POTATO PACKET: Follow the directions left but combine potatoes with 2 medium shallots, thinly sliced; 2 tablespoons olive oil; and 2 teaspoons minced fresh thyme or ½ teaspoon dried thyme. Sprinkle with 13cup chopped fresh parsley before serving.
