Grilled Eggplant with Feta and Fresh Mint
We love the combination of smoky grilled eggplant and tangy feta cheese. Serve with grilled lamb chops for a zesty, Mediterraneaninspired meal. For photo, ♣.

MAKES: 6 side-dish servings
1 large eggplant (about 1 ½ pounds),
cut into ½ -inch-thick slices
2 tablespoons olive oil
¼ cup crumbled feta cheese
2 tablespoons chopped fresh mint
orange wedges
1. Heat a ridged grill pan over medium-high until hot. Brush each eggplant slice with oil.
2. Place eggplant slices on hot pan; cook until tender, 8 to 10 minutes, turning over once. Transfer to platter.
3. Sprinkle with feta and mint, and drizzle with juice from 1 orange wedge. Garnish with remaining orange wedges.
