Grilled Plum Tomatoes

Be sure to use plum tomatoes. They are firm, with low moisture content, and hold up well when grilled.

PREP: 10 minutes GRILL: 8 to 10 minutes

MAKES: 8 side-dish servings

8 large plum tomatoes (about 2 pounds),
cored and each cut lengthwise in half

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon ground black pepper

1. Prepare outdoor grill for covered direct grilling over medium-high heat.

2. In large bowl, toss tomatoes with oil, salt, and pepper.

3. Place tomatoes on hot grill rack. Cover grill and cook tomatoes until they begin to char and soften, 8 to 10 minutes, turning over once.
