Horseradish-Mustard Mayo
PREP: 5 minutes
MAKES: about ½ cup
¼ cup light mayonnaise
1 tablespoon undrained prepared white
horseradish
2 teaspoons stone-ground Dijon mustard
In small serving bowl, combine mayonnaise, horseradish, and mustard; stir until blended.

Bacon-Chipotle Mayo
PREP: about 7 minutes
MAKES: about cup
2 slices bacon
¼ cup light mayonnaise
1 teaspoon canned chipotle chile puree
(adobo)
1. Place bacon between 2 paper towels on microwave-safe plate. Cook bacon in microwave on High 1½ to 2 minutes, until well browned. Cool bacon until crisp.
2. Crumble bacon; place in small serving bowl. Stir in mayonnaise and chile puree until blended.

Grilled Onion–Thyme Mayo

1 medium onion, cut crosswise into ½ -inch-
thick slices
¼ cup light mayonnaise
1 teaspoon fresh thyme leaves, chopped
1. Prepare outdoor grill for covered direct grilling over medium heat. Place onion slices on hot grill rack and cook until tender and browned on both sides, 8 to 10 minutes, turning over once.
2. Transfer onion to cutting board; coarsely chop. Place onion in small serving bowl; stir in mayonnaise and thyme until blended.
