Asian Cucumber Salsa

This simple and refreshing salsa, with crisp cucumbers and fragrant mint, goes well with grilled chicken of any kind.

PREP: 15 minutes

MAKES: about 3 ½ cups

4 medium Kirby cucumbers (about 4 ounces
each), unpeeled, each cut lengthwise into
quarters, then crosswise into¼ -inch-thick
pieces

1 medium carrot, peeled and grated

1 cup loosely packed fresh mint leaves,
chopped

¼ cup seasoned rice vinegar

In medium bowl, place cucumbers, carrot, mint, and vinegar; toss to combine. If not serving right away, cover and refrigerate up to 1 day.
