Grilled Cilantro Pork Burgers
This is a wonderful Asian-style take on the pork burger—almost like a pork dumpling on a bun! You can also make these burgers using ground chicken or turkey.
PREP: 15 minutes GRILL: 10 to 12 minutes
MAKES: 4 burgers
¼ cup light mayonnaise
1 tablespoon soy sauce
1¼ pounds ground pork or chicken
½ cup loosely packed fresh cilantro leaves, coarsely chopped
3 green onions, chopped
1 tablespoon dry sherry
1 tablespoon finely chopped, peeled fresh ginger
1 teaspoon Asian sesame oil
¼ teaspoon crushed red pepper
teaspoon salt
4 sesame-seed hamburger buns, split and toasted
1. Prepare outdoor grill for covered direct grilling over medium heat, or lightly spray a ridged grill pan with nonstick cooking spray, then heat on medium until hot.
2. In cup, stir mayonnaise and soy sauce until blended. Set aside.
3. In medium bowl, combine pork, cilantro, green onions, sherry, ginger, sesame oil, crushed red pepper, and salt until blended, but do not overmix. Shape pork mixture into four -inch-thick burgers, handling meat gently for best texture.
4. Place burgers on hot grill rack or pan; cook until entirely cooked through, 10 to 12 minutes, turning over once—an instant-read meat thermometer inserted horizontally into center should register 160°F. (If using chicken or turkey, spray burgers with nonstick cooking spray and cook 12 to 14 minutes, to an internal temperature of 170°F.)
5. Serve burgers on buns with soy mayonnaise.
