Buffalo Chicken Burgers
We paired the traditional Buffalo-wing flavors of pungent blue cheese and fiery hot sauce to create this exciting chicken burger.
PREP: 15 minutes GRILL: 12 to 14 minutes
MAKES: 4 burgers
¼ cup light mayonnaise
¼ cup reduced-fat sour cream
2 ounces blue cheese, crumbled (about ½ cup)
2 teaspoons cider vinegar
½ teaspoon Worcestershire sauce
1¼ pounds ground chicken or turkey
1 stalk celery, finely chopped
3 tablespoons cayenne pepper sauce, plus more for serving
nonstick cooking spray
4 hamburger buns, split and toasted
lettuce leaves
carrot and celery sticks
1. Prepare outdoor grill for direct grilling over medium heat, or lightly spray a ridged grill pan with nonstick cooking spray, then heat on medium until hot.
2. In small bowl, stir mayonnaise, sour cream, blue cheese, vinegar, and Worcestershire until blended. Set blue cheese sauce aside. Makes about cup.
3. In medium bowl, combine chicken, celery, and cayenne pepper sauce just until blended. Shape mixture into four -inch-thick burgers. Spray both sides of burgers with cooking spray.
4. Place burgers on hot grill rack or pan. If grill has widely spaced grates, place burgers on perforated grill topper to keep them intact. Grill, turning once, until juices run clear when center of burger is pierced with tip of knife, 12 to 14 minutes. (An instant-read meat thermometer inserted horizontally into center should register 170°F.)
5. Serve burgers on buns with lettuce and some blue cheese sauce. Serve remaining blue cheese sauce with carrot and celery sticks for dipping. Pass additional cayenne pepper sauce with burgers if you like.
