Jerk Turkey Burgers

When ground turkey is spiced up with Jamaican jerk seasoning and fresh thyme, burger night takes on juicy and flavorful edge.

PREP: 10 minutes      GRILL: 12 to 14 minutes

MAKES: 4 burgers

13 cup light mayonnaise

2 teaspoons chopped fresh thyme

¼ teaspoon freshly grated orange peel

1¼ pounds ground turkey or chicken

2 green onions, chopped

1 small jalapeño chile with seeds, chopped

34 teaspoon salt

4 teaspoons Jamaican jerk seasoning

nonstick cooking spray

4 hamburger buns, split and toasted

4 lettuce leaves

1. Prepare outdoor grill for direct grilling over medium heat, or lightly spray a ridged grill pan with nonstick cooking spray, then heat on medium until hot.

2. In small bowl, stir mayonnaise, thyme, and orange peel until well blended. Set sauce aside. Makes about 13 cup.

3. In medium bowl, combine turkey, green onions, jalapeño, and salt just until blended. Shape mixture into four 34-inch-thick burgers. On a sheet of waxed paper, pat jerk seasoning onto both sides of burgers. Lightly spray both sides of burgers with cooking spray.

4. Place burgers on hot grill rack or pan; cook, turning once, until juices run clear when center of burger is pierced with tip of knife, 12 to 14 minutes. (An instant-read meat thermometer inserted horizontally into center should register 170°F.)

5. Serve burgers on buns with lettuce and seasoned mayonnaise.
