Asian Tuna Burgers
Finely chop the fish by hand for a light texture; using a food processor will make the patties dense and dry. Serve with or without a bun, with pickled ginger or Cucumber Relish.
PREP: 15 minutes GRILL: 6 to 7 minutes
MAKES: 4 burgers
1 tuna steak (about 1 pound)
1 green onion, thinly sliced
2 tablespoons reduced-sodium soy sauce
1 teaspoon grated, peeled fresh ginger
¼ teaspoon coarsely ground black pepper
¼ cup plain dried bread crumbs
2 tablespoons sesame seeds
nonstick cooking spray
1. Prepare outdoor grill for direct grilling over medium heat.
2. With large chef’s knife, finely chop tuna and place in medium bowl. Add green onion, soy sauce, ginger, and pepper; mix until combined (mixture will be very soft and moist). Shape tuna mixture into four 3-inch round patties.
3. On waxed paper, combine bread crumbs and sesame seeds. Carefully press patties into mixture, turning to coat both sides. Spray both sides of tuna patties with cooking spray.
4. Place patties on hot grill rack and grill, turning once, until browned on the outside and still slightly pink in the center for medium-rare, 6 to 7 minutes, or to desired doneness.
