You can buy protein powder in most health-food stores. Ground flaxseed is not only gluten-free; it’s also a great source of fibre and healthy omega-3 fatty acids.

CHILL 1–2 HOURS
150g (5oz/⅔cup) smooth peanut butter
75g (3oz/¾ cup) rolled oats
50g (2oz/generous ¼ cup) diced dates
2 tbsp protein powder
5 tbsp ground flaxseed (flaxseed meal)
2 tbsp chia seeds
5 tbsp clear honey or maple syrup
Warm and soften the peanut butter in a microwave to make it easier to mix.
Stir in the other ingredients until you have a smooth, well-mixed dough. If the mixture is too sticky, add some more oats; if it’s too dry, add some more honey, syrup or peanut butter.
Take small spoonfuls of the mixture and, with your hands, roll into small balls.
Place them on a large baking tray (cookie sheet) lined with baking parchment and chill in the fridge for 1–2 hours until set and then transfer to an airtight container. They will keep well in the fridge for 10–14 days.
