VEGAN OPTION


CASHEW BUTTER AND BANANA TOASTIES


This is very nutritious and can be made in minutes. You can even eat it on the go!

SERVES 4

PREP 5 MINUTES

4 medium slices wholegrain or multi-seed bread

4 tbsp cashew butter

2 small bananas, sliced

2 tbsp chopped cashews or pistachios

ground cinnamon, for dusting

clear honey or maple syrup, for drizzling (optional)

Lightly toast the bread and spread with the cashew butter.

Top with the sliced banana and chopped nuts.

Dust with cinnamon and then drizzle with honey or maple syrup.


VARIATIONS

  • Spread the toast with almond butter and top with sliced banana, toasted almonds and crunchy granola.
  • Spread the toast with peanut butter and top with blueberries, then sprinkle with chia seeds.
