Ingredients

1 cup dry Split green moong or mung beans

1 Tbsp ginger, grated

1 jalapeno minced

2 medium onions, chopped

1/2 cup cilantro, chopped fine

1 tsp ground coriander

Oil for deep frying

Method

Soak the moong daal or split moong beans for 6-8 hours. Cover well with water.

Drain the water and add the soaked daal or split moong beans to a food processor. Add the ginger and green chili pepper.

Process until smooth using very little water.

Transfer to bowl.

Add the chopped onion, cilantro, ground coriander and salt. Mix well.

Heat 3-4 cups oil in a wok.

When oil is hot, add spoonfuls of the batter and fry on a medium flame until crispy and golden. Transfer to paper lined plate.

Continue frying fritters this way.

Makes 25-30 key lime sized fritters.

Serve hot with ketchup or sweet tamarind chutney as a snack or side dish.
