4-6 medium potatoes
2 medium carrots
1/2 head cauliflower
1/2 green bell pepper
1/2 cup green beans
1/2 cup green peas
1 cup tomatoes chopped
1/2 cup onion chopped finely
3 cups crushed tomato
2-3 tsp sugar
Salt to taste
1-2 sticks salted butter or margarine
3-4 Tbsp Pav Bhaji Masala
For the bread –
8 Dinner rolls or slider buns or pao or pav
2 Tbsp butter
For garnish -
1 cup onion, finely chopped
1/2 cup cilantro, finely chopped
Lime or lemon wedges

Chop carrots, cauliflower, green beans, bell pepper roughly.
Pulse all veggies and peas in food processor until almost minced.
Heat a pat of butter in a pan and fry the veggie mince until it reduces a bit and is half cooked. Set aside.
Boil potatoes, peel and mash them and set aside.
Heat 1 tsp of oil and half a stick of butter in a thick pot or saute pan.
When butter melts, add the chopped onion and fry until it is lightly pink.
Add the chopped tomato and fry until it softens and cooks down. Add a Tbsp of Pav Bhaji Masala now.
Add the veggie mince and fry for a few minutes.
Mash the veggie mince using a potato masher until well mixed.
Add crushed tomatoes and mashed potatoes.
Mix using potato masher.
Add a few pats of butter and another spoonful of Pav Bhaji Masala mix.
Add sugar and salt to taste.
Add water if needed so that the mash is like a thick stew.
Add more spice mix, a little more butter and simmer until you are ready to serve.
Makes 6-8 cups of Bhaji or veggie sauce depending on consistency.
For serving -
Slit the pav or rolls length wise and butter them inside out. Toast in a pan on buttered sides.
Ladle the veggie mash into a bowl. Top with chopped raw onion, fresh squeezed lemon juice and a pat of butter along with the toasted bread.
Note – If you can find ‘Amul Butter’ in an Indian grocery store near you, go for it!
