4 rashers bacon
½ avocado, stoned and peeled
Squeeze of lemon juice
2 ciabatta rolls
1–2 tbsp mayonnaise
2 lettuce leaves
Salt and freshly ground black pepper
Pre-heat the grill to medium-high then grill the bacon until crisp. Mash the avocado and add a squeeze of lemon juice to prevent it discolouring.
Cut the rolls in half, spread each with the mayonnaise then top with the mashed avocado and bacon followed by a lettuce leaf. Season to taste then wrap for transporting.
