Goats’ Cheese with Basil and Sweet Chilli Sauce

SERVES: 8

Preparation time: 10 minutes

6 tbsp sweet chilli dipping sauce

2 × 150 g tubs soft goats’ cheese

Handful basil leaves

1 red chilli, seeded and finely chopped (optional)

TO SERVE:

Crudités, such as radishes, carrots, cucumber and celery

Cheese biscuits, such as oatcakes

Prepare the crudités then place them in a plastic food bag, seal and chill. Keep the sweet chilli dipping sauce and goats’ cheese in their packaging until ready to serve.

To assemble the dish, turn out the goats’ cheese onto a platter and drizzle with the sweet chilli dipping sauce. Remove the basil leaves from their stalks and tear into small pieces if large. Sprinkle the basil over the goats’ cheese, followed by the chilli, if using.

Serve immediately with the selection of prepared crudités and your favourite cheese biscuits, such as oatcakes.

The girls really love eating this moreish dip with tortilla chips – the Waitrose ones are particularly good!
