Broad Bean, Ham and Feta Salad

450 g (1 lb) shelled broad beans
2 thick slices ham, diced
100 g (3½ oz) feta, cubed
Handful rocket leaves
FOR THE DRESSING:
2 tbsp extra-virgin olive oil
2 tbsp lemon juice
2 tbsp roughly chopped fresh basil
2 tbsp roughly chopped mint
Salt and freshly ground black pepper
Blanch the broad beans in boiling water until tender then remove the tough outer skin. Allow to cool.
Put the broad beans, ham, feta and rocket in a serving bowl with a lid.
To make the dressing, put all the ingredients in a jar or lidded container for transporting. When ready to serve, shake the dressing and pour it over the salad. Toss the salad until coated in the dressing.
