Melon and Mint Crush

SERVES: 8

Preparation time: 15 minutes, plus chilling

Total time: 15 minutes, plus chilling

1 Galia melon, seeded and flesh scooped out

Handful mint leaves, stalks discarded and leaves finely chopped

1–2 tbsp caster sugar, to taste

TO SERVE:

Vodka

Tonic water

Cucumber slices

Process the melon in a blender or food processor until smooth.

Stir the mint into the melon crush with 1–2 tablespoons caster sugar, to taste. Pour the melon mixture into a plastic container, seal well and chill.

Spoon 3–4 tablespoons melon crush and 1–2 tablespoons vodka into each glass. Top up with tonic water, and stir. Add slices of cucumber and serve. (For a non-alcoholic version, leave out the vodka and top up with tonic, lemonade or sparkling water.)
