Makes 6–8 servings
1 Tbsp. butter
½ cup chopped onion
6 oz. chipped ham, or 6 oz. mild sausage, cooked and drained
1 medium tomato, chopped
2 cups biscuit mix
½ cup cold water
1 cup shredded Swiss or cheddar cheese
¼ cup milk
2 eggs
¼ tsp. salt
¼ tsp. pepper
¾ tsp. fresh dill (¼ tsp. dried)
2 Tbsp. chopped fresh chives
1. Sauté onion in butter until onion is tender. Stir in meat and tomatoes.
2. Mix baking mix and water until soft dough forms. Pat dough into greased 12” pizza pan, pushing up at least ½” of dough around edge of pan.
3. Spread meat and vegetable mixture over dough. Sprinkle with cheese.
4. Beat together milk, eggs, salt, pepper, and dill until foamy. Pour over cheese. Sprinkle with chives.
5. Bake at 350°F for 25–30 minutes, or until golden brown.
6. Delicious served with fresh fruit salad or freshly squeezed fruit juice.
