Rosemary Roast Potatoes

Makes 4 servings

¼ cup olive oil

2 cloves garlic, minced

1 Tbsp. chopped fresh rosemary (1 tsp. dried)

salt to taste

2 lbs. potatoes, cut in large chunks

chives, or garlic chives, for garnish

1. Mix together oil, garlic, rosemary, and salt.

2. Roll potatoes in herb oil until coated. Transfer to shallow baking dish. Pour any remaining oil over potatoes.

3. Bake at 400°F for 45 minutes, or until potatoes are tender and brown. Garnish with finely chopped chives.
