Carrot-Thyme Pasta

Makes 4 servings

1 large garlic clove, minced

1 Tbsp. olive oil

2 cups shredded carrots

¾ tsp. Herbs de Provence*

1 large onion, chopped

2 fresh tomatoes, chopped

1 pkg. Ramen-type noodles

freshly grated Romano cheese

1. Sauté garlic in oil for 1 minute. Stir in carrots and Herbs de Provence.

2. Add onion and tomatoes. Cook until mixture bubbles.

3. Gradually break Ramen noodles into cooked mixture. Add a couple of tablespoons of water if needed. Stir to finish cooking the noodles.

4. Serve with cheese sprinkled over top.

*To make 1½ cups Herbs de Provence: mix together ¼ cup dried marjoram, ¼ cup dried oregano, ½ cup dried rosemary, ½ cup dried thyme, and 2 Tbsp. dried lavender buds.
