Fresh Dilled Fish

Makes 2 servings
12 oz. firm fresh fillets (orange roughy and salmon work well)
4 tsp. fresh lemon juice
2 tsp. chopped fresh dill (⅔ tsp. dried), or more
dash of salt
dash of ground pepper
½ cup sour cream
2 thick slices red onion
1. Rinse and dry fillets. Place skin side down in an oiled baking dish.
2. Sprinkle with lemon juice, dill, salt, and pepper.
3. Spread sour cream evenly over fish. Break onion slices into rings and press into sour cream. Cover.
4. Bake at 375°F until fish is no longer translucent and flakes easily with fork. Most fillets take 25–30 minutes, depending on their thickness.
5. Serve with rice or tabbouleh and garnish with a thin slice of lemon and sprig of dill.
