Air Fryer Breakfast Banana Bread

Ingredients

Cooking spray

2 (3/4 ounce) tbsp of toasted walnuts, roughly chopped

1 tsp of Vanilla extract

2 tbsp of vegetable oil 

1/3 cup of plain nonfat yogurt

1/2 cup of granulated sugar

2 lightly beaten large eggs

2 (6 ounces) medium ripe bananas, mashed (about 3/4 cup)

1/4 tsp of Baking soda

1/2 tsp of kosher salt

1 tsp of cinnamon 

3/4 (3 oz.) cup of white-whole wheat flour

Directions

1. Line the base of a rimmed 6-inch cake pan with parchment paper and lightly spray using the cooking spray. In a medium bowl, whisk together baking soda, flour, salt and cinnamon; set aside.

2. Whisk yogurt, eggs, mashed bananas, vanilla, oil and sugar together in separate medium bowl. Slowly mix banana mixture into the dry ingredients until combined well. Transfer batter into the grease cake pan and top with walnuts.

4. Preheat a 5.3-qt air fryer for 3-4 minutes at 310°F, place pan and cook for 30 to 35 minutes, turning pan midway through cook time until browned and a skewer inserted in the center comes out dry,

5. Let bread cool for 15 minutes in pan on a wire rack before removing to slice.
