Baked Ratatouille Breakfast

Ingredients

Round baking dish, (16 cm)

1 tbsp of olive oil

Freshly ground black pepper

2 tsp of dried Provençal herbs

1 crushed clove garlic

1 onion, peeled

2 tomatoes

1 yellow bell pepper

200 grams of courgette or/and aubergine

Directions

1. Heat up your Airfryer to 400 F.

2. Cut the aubergine or/and courgette, onion, tomatoes, and bell pepper into 2 cm cubes.

3. In a dish, combine the vegetables and garlic, add Provençal herbs, half tsp of the salt and pepper. Stir in olive oil.

4. Place the dish in the Air fryer basket and cook the ratatouille for 15 minutes at 400 F. Stirring once during cooking time. Serve your delicious ratatouille with fried meat such as cutlet.
