Ingredients
Vegetable oil
½ lemon, sliced
½ cup of white wine
Salt and freshly ground black pepper
2 (6-oz) of lobster tails
1 thinly sliced clove garlic
1 tbsp of finely chopped lemon zest
4 oz of unsalted butter
Directions
1. In a small saucepan, mix together the butter, garlic and lemon zest over low heat.
2. Cut the center top of the lobster shell down. To crack the bottom shell, squeeze the lobster sides together to give you access to the meat inside. Draw out the tail of the shell, leaving it connected at the tail's bottom.
3. Arrange the meat over the shell top, season with pepper and salt. Add a bit of butter mixture over the lobster meat
4. Refrigerate the lobster to solidify the butter a bit.
5. In the air fryer drawer, add white wine and lemon slices. Heat up your air fryer to 200c for 5 minutes.
6. Place lobster tails to the basket of the air fryer and cook for 5 minutes at 370º, brush with additional butter midway through cooking. Serve with extra butter for drizzling.
Note: Larger lobster will need more cooking time.
