Ingredients
Vegetable oil for spraying
¼ teaspoon of black pepper
1 teaspoon of salt
¼ cup of Panko Breadcrumbs
½ cup of unsweetened shredded coconut
½ cup of All-Purpose Flour
2 eggs beaten
1 pounds of large raw shrimp, peeled and deveined, leave the tail on (Clean and pat dry)
Directions
1. In three separate bowls, add beaten egg in bowl one, in a second bowl, place flour. In the third bowl, combine breadcrumbs, coconut, black pepper and salt.
2. Heat up the Air Fryer to 390 F for 3 minutes. Coat shrimp in the flour, then dip in the beaten egg, and lastly coat the shrimp in the coconut mixture, until well coated.
3. You can cook in batches. Add shrimp in a greased basket of an air fryer in single layer, spritz lightly with oil.
4. Cook at 390 F for 9 minutes, flip shrimp over and spray again 4 minutes into the cooking time until cooked through and crispy. Serve shrimp with Thai Sweet Chili Sauce.
