Roasted Vegetables

Ingredients

Pepper & salt to taste

1 tablespoon of olive oil

1 tablespoon of fresh thyme needles

300 grams of ‘butternut squash’ halved and remove seed, cut into cubes

2 red onions

300 grams of celeriac

300 grams of parsnips

Directions

1. Heat up your Airfryer to 200°C.

2. Peel the onions, celeriac and parsnips. Cut the celeriac and parsnips into two cm cubes and chop the onions into wedges.

3. Mix vegetables with olive oil and thyme and season with pepper & salt to taste.

4. Transfer into the airfryer basket and roast for 20 minutes, stirring once while roasting until vegetables are done and nicely brown.
