Ingredients
1/4 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup olive oil
1/2 teaspoon nutmeg
1/2 cup walnuts, chopped
1 cup zucchini, grated
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 1/2 cups erythritol
1 1/2 teaspoons baking powder
2 1/2 cups almond flour
3 big eggs
Instructions
1. Heat the oven up to 350°F, then use a mixing bowl to combine the oil, eggs, vanilla extract then set aside.
2. Using a separate bowl, add in the erythritol, almond flour, baking powder, salt, cinnamon, nutmeg, ginger then set aside.
3. Place the zucchini in a paper towel then squeeze out every excess water from the zucchini.
4. Add the zucchini into the bowl with eggs and whisk together then slowly add in the flour mixture and mix until properly blended.
5. With the aid of a cooking spray, grease a 9x5 loaf pan then scoop the bread mixture in and top with the chopped walnuts.
6. Use a spatula to press the walnuts into the bread mixture then bake until the top turns brown for 60-70 minutes.
7. Serve warm and devour.
