Ingredients
2 cups fine almond flour, blanched
2 tablespoons coconut flour
1/2 teaspoon sea salt
1 teaspoon baking soda
1/4 cup flax seed meal
5 eggs with 1 egg white whisked
1 1/2 teaspoon juiced lime
2 tablespoons maple syrup
2–3 divided tablespoon of melted butter
1 tablespoon cinnamon with extra for topping
Instructions
1. Heat the oven up to 350°F then use parchment paper to line a loaf pan grease the sides.
2. Use a mixing bowl to combine the coconut flour, almond flour, baking soda, salt, 1/2 tablespoon cinnamon and flax seed together.
3. With another bowl add in the egg white and eggs then whisk together then add in the maple syrup butter, vinegar and combine.
4. Pour the flour mixture into the egg mixture then mix ensuring no clumps are left then transfer into the lined loaf pan.
5. Bake for 30-35 minutes at 350°F then remove from the oven.
6. Combine the remaining cinnamon and melted butter together then use it to rub the baked bread.
7. Cool, slice, then serve and enjoy or store for later.
