Ingredients
1/2 cup coconut milk
1/2 teaspoon baking soda
1/2 cup powdered erythritol
1/2 teaspoon powdered stevia
1 teaspoon salt
1 bag cranberries
1 teaspoon blackstrap molasses, if desired
1 1/2 teaspoons baking powder
2 cups almond flour
4 large eggs
4 tablespoons unsalted melted butter
Instructions
1. Heat the oven up to 350°F then line a loaf pan with parchment paper and set aside.
2. Add the erythritol, flour, baking powder, stevia, salt and baking soda into a mixing bowl and combine together then set aside.
3. With another bowl, add in the molasses, butter, coconut milk, eggs and mix together.
4. Combine the erythritol mixture with the molasses mixture, then add in the cranberries and fold then transfer into the loaf pan.
5. Fit the pan into the oven and bake for 1 hour 15 minutes.
6. Allow the bread cool off then slice and enjoy.
