Deli Ham & Egg Muffins

Cook Time: 15 minutes

Servings: 6 muffins

Ingredients

1/4 cup crumbled feta cheese

1/3 cup minced fresh spinach

1/2 cup canned red pepper, roasted & sliced with extra for topping

1 1/2 tablespoons pesto sauce

5 large eggs

9 thin cut deli ham slices

a pinch of salt

a pinch of pepper

fresh basil, to garnish

Instructions

1. Heat the oven up to 400°F then coat the muffin tins generously with cooking spray.

2. Use 1 1/2 piece of the deli ham to line the bottom of the muffin tins, ensure no holes are left unclosed.

3. Add in a little of the roasted red pepper into each of the muffin then pour in a tablespoon of minced spinach.

4. Add in 1/2 tablespoon of the feta cheese and set aside.

5. With a medium sized mixing bowl, add in the pepper, salt and eggs then whisk together.

6. Evenly divide the mixture in between the muffin tins then fit into the oven.

7. Bake until the eggs are set and puffy for 15-17 minutes.

8. Top with 1/4 teaspoon pesto sauce with fresh basil and roasted red pepper slices.

9. Serve and enjoy.
