Ingredients
for the bacon cheddar
1/4 cup chopped & cooked bacon
1/4 cup cheddar cheese, shredded
for the garlic mushroom pepper
1/4 teaspoon powdered garlic
1/4 cup diced red bell pepper
1/4 cup brown mushrooms, sliced
1 tablespoon chopped fresh parsley
for the spinach tomato mozzarella
1/4 cup mozzarella cheese, shredded
1/4 cup roughly chopped fresh spinach
8 halved cherry tomatoes
for the bottom
2 tablespoons neatly chopped red onion
12 big eggs
salt & pepper, as desired
Instructions
1. Heat the oven up to 350°F then slightly coat 12 muffin tins with cooking oil spray.
2. With a large mixing bowl, add in the onion, eggs and whisk together then season with the salt & pepper as desired.
3. Fill the greased muffin tins with the egg mixture up to half then top each tin with the three topping combinations.
4. Fit the muffin cups into the oven and bake for 20 minutes until set to taste.
5. Serve and enjoy or refrigerate for up to 4 days.
