Buttered Coffee Cake Muffins

Ingredients

for the batter

1/3 cup sweetener

1/4 teaspoon salt

1/2 cup coconut flour

1/2 cup vanilla almond milk, unsweetened

1 cup almond flour

1 teaspoon baking powder

2 teaspoons vanilla

2 tablespoons melted butter

2 ounces melted cream cheese

4 eggs

for the topping

1/4 cup sweetener

1/4 cup melted butter

1/2 teaspoon molasses, if desired

1 cup almond flour

1 teaspoon cinnamon

2 tablespoons coconut flour

Instructions

1. Heat the oven up to 350Ā°F then use paper liners to line muffin tin and grease with cooking oil spray.

2. Use a food processor to combine all the ingredients for the batter then mix thoroughly and divide then mixture in between the prepared muffin tin.

3. Use the food processor to mix the ingredients for the toppings together then process until crumbs are reached.

4. Sprinkle the topping crumbs on top of the batter then fit into the oven.

5. Bake until golden for 20-25 minutes, cover with a foil incase the topping start getting dark too quickly.

6. Serve warm and enjoy.
